Apple cake

Ingredients
- 120g AP flour
- 1tsp baking powder
- 1/2tsp salt
- 85g butter, melted
- 2 eggs, room temperature
- 160g brown sugar
- 1/2tsp vanilla extract
- 3 apples, peeled, sliced about 1/4in thick (about 510g)
- Dash of cinnamon
Instructions
- Pre-heat the oven to 350°F.
- Combine dry ingredients and set aside(flour, baking powder, salt).
- Beat the butter, brown sugar, eggs and the vanilla extract until lighter in colour and slightly foamy.
- Combine the wet and the dry. Fold in the apples.
- Pour batter into an 8 or 9in pan lined with parchment paper (or oil the pan). Add a dash of cinnamon on top if you're feeling fancy.
- Bake until golden brown and pass the toothpick test. Rest for 15 mins before cutting.
