Apple cake

Apple cake

Ingredients

  • 120g AP flour
  • 1tsp baking powder
  • 1/2tsp salt
  • 85g butter, melted
  • 2 eggs, room temperature
  • 160g brown sugar
  • 1/2tsp vanilla extract
  • 3 apples, peeled, sliced about 1/4in thick (about 510g)
  • Dash of cinnamon

Instructions

  1. Pre-heat the oven to 350°F.
  2. Combine dry ingredients and set aside(flour, baking powder, salt).
  3. Beat the butter, brown sugar, eggs and the vanilla extract until lighter in colour and slightly foamy.
  4. Combine the wet and the dry. Fold in the apples.
  5. Pour batter into an 8 or 9in pan lined with parchment paper (or oil the pan). Add a dash of cinnamon on top if you're feeling fancy.
  6. Bake until golden brown and pass the toothpick test. Rest for 15 mins before cutting.
