Chicken Cacciatore

Ingredients
- 5 Chicken Thighs with Skin and Bone
- 28oz Can Crushed Tomatoes
- 250g Onion
- 300g Bell Pepper
- 40g Garlic
- 1tbsp Brown Sugar
- 1tbsp Smoked Paprika
Instructions
- Prepare the vegetables. Mince the garlic. Sliver the onion and the bell pepper (julienne slices).
- Season the chicken thighs with salt and pepper. Add oil to a dutch over and sear the chicken skin side down. Once browned, remove the chicken from the dutch oven and on to a plate. Set aside.
- Preheat oven to 325 degrees F.
- Add the vegetables into the dutch oven with the left over chicken fat and saute. About 5-8 minutes or until softened. Season with salt.
- Add the crushed tomatoes to the dutch oven. Season the mixture with salt and pepper. Add the smoked paprika and brown sugar. Mix to incorporate
- Add the chicken into the sauce with the skin side up.
- Add the dutch oven to the oven and cook for about 45 minutes, covered with the lid.
- Finish with some lemon juice if desired.
Notes
- Recommended to serve atop some pasta to make a more cohesive meal but as this is considered a stew, only eating the chicken and the sauce is generally done as well.
