Mapo Tofu
Ingredients
- 8 Dried Red Chilies
- 5-6 Cloves Minced Garlic
- 1 lb Ground Pork
- 1 tbsp Ground Sichuan Pepper
- 1 tsp Ground Ginger
- 2 tbsp Spicy Bean Paste
- 2/3 cups Broth or Water
- 454 grams Diced Firm or Silken Tofu
- 1/4 tsp Sugar
- 1/4 tsp Sesame Oil
- Cornstarch Slurry to Thicken

Instructions
- Mince garlic.
- Dice tofu.
- Make cornstarch slurry. Set aside.
- Chop green onion (optional)
- Soak black beans (optional)
- Add oil to a large wok.
- Fry the chili and garlic.
- Add the ground pork and cook.
- Add the seasonings of Sichuan Pepper and Ground Ginger.
- Make a hole in the center and add the spicy bean paste. Fry for a couple minutes. Add black beans here if using.
- Add broth/water and bring to simmer.
- Add tofu.
- Add cornstarch slurry and cook until desired consistency.
- Once finished, turn off heat and stir in sugar and sesame oil.
Notes
- Optional ingredients to add for additional flavour: Black Beans, and Fresh Red Thai Chili.
- Serve on white rice.
