Mapo Tofu

Ingredients

  • 8 Dried Red Chilies
  • 5-6 Cloves Minced Garlic
  • 1 lb Ground Pork
  • 1 tbsp Ground Sichuan Pepper
  • 1 tsp Ground Ginger
  • 2 tbsp Spicy Bean Paste
  • 2/3 cups Broth or Water
  • 454 grams Diced Firm or Silken Tofu
  • 1/4 tsp Sugar
  • 1/4 tsp Sesame Oil
  • Cornstarch Slurry to Thicken

Garnishes

  • Chopped Green Onion

Instructions

  1. Mince garlic.
  2. Dice tofu.
  3. Make cornstarch slurry. Set aside.
  4. Chop green onion (optional)
  5. Soak black beans (optional)
  6. Add oil to a large wok.
  7. Fry the chili and garlic.
  8. Add the ground pork and cook.
  9. Add the seasonings of Sichuan Pepper and Ground Ginger.
  10. Make a hole in the center and add the spicy bean paste. Fry for a couple minutes. Add black beans here if using.
  11. Add broth/water and bring to simmer.
  12. Add tofu.
  13. Add cornstarch slurry and cook until desired consistency.
  14. Once finished, turn off heat and stir in sugar and sesame oil.
