Potato Bread

Ingredients

  • 1 Potato, about 180-200g
  • 1 tsp Yeast
  • 120 ml Water
  • 1 tsp Sugar
  • 300 g Bread Flour
  • 1 tsp Salt
  • 2 tbsp Olive Oil

Instructions

  1. Boil water in small pot. Peel and cut potato into cubes, and cook with boiling water.
  2. When fork can poke through the potato easily (~10 mins), take strain the water and mash the potato with the fork. Try to make it as fine as possible, or your bread will look lumpy. Set potato aside to cool.
  3. Dissolve yeast and sugar in lukewarm water. You can also use boiled potato water, as long as it cools to below 110°F.
  4. Mix bread flour, salt, mashed potatoes in a bowl. Add in yeast mixture. Knead into a dough, then add the olive oil.
  5. When dough is finished kneading, set aside for 1 hour.
  6. Split dough into 8 portions. Each portion should be about 70-80g each.
  7. Fold and roll each piece into a circle. Place onto pan lined with parchment paper. Set aside for 1 hour.
  8. Brush dough with egg wash(1 egg + 1tbsp milk).
  9. Bake at 375°F for 18-20 minutes, until golden brown and shell is slightly hard.
