Potato Bread
Ingredients
- 1 Potato, about 180-200g
- 1 tsp Yeast
- 120 ml Water
- 1 tsp Sugar
- 300 g Bread Flour
- 1 tsp Salt
- 2 tbsp Olive Oil
Instructions
- Boil water in small pot. Peel and cut potato into cubes, and cook with boiling water.
- When fork can poke through the potato easily (~10 mins), take strain the water and mash the potato with the fork. Try to make it as fine as possible, or your bread will look lumpy. Set potato aside to cool.
- Dissolve yeast and sugar in lukewarm water. You can also use boiled potato water, as long as it cools to below 110°F.
- Mix bread flour, salt, mashed potatoes in a bowl. Add in yeast mixture. Knead into a dough, then add the olive oil.
- When dough is finished kneading, set aside for 1 hour.
- Split dough into 8 portions. Each portion should be about 70-80g each.
- Fold and roll each piece into a circle. Place onto pan lined with parchment paper. Set aside for 1 hour.
- Brush dough with egg wash(1 egg + 1tbsp milk).
- Bake at 375°F for 18-20 minutes, until golden brown and shell is slightly hard.
